Prize-Winning Funnel Cakes
There's nothing quite as tasty as a hot and sweet funnel cake. The kid in all of us loves the powdered sugar topping! Be sure to try these delicious cakes from Coming Home with Gooseberry Patch topped with your favorite fruit pie filling.
2 c. all-purpose flour
1 T. sugar
1 t. baking powder
1/4 t. salt
2 eggs, beaten
1-1/4 c. milk
oil for deep frying
Garnish: powdered sugar
Optional: apple, cherry or blueberry pie filling
Sift together flour, sugar, baking powder and salt into a deep bowl. Make a well in the center; add eggs and enough milk to make a thin batter. Mix well. Heat several inches of oil to 375 degrees in a deep saucepan. With fingertip over end of funnel, spoon batter by 1/2 cupfuls into a funnel over hot oil, one at a time, swirling funnel as batter is released. Cook until golden, about 2 minutes per side. Drain on paper towels. Sprinkle with powdered sugar; top with fruit pie filling if desired. Serve immediately. Makes about 4 servings.
