Makin’ My Own Sunshine Cake
This make-ahead recipe was shared with us by Stacy Friend of Grand Forks, North Dakota. She writes, "As a busy mom of quadruplets, I find this easy-to-make cake a necessity when it’s time for a sweet treat!"
18-1/2 oz. pkg. lemon cake mix
3-oz. pkg. orange gelatin mix
1 c. boiling water
1/2 c. orange juice
8-oz. container frozen whipped topping, thawed
Bake cake according to package directions in a 13"x9" baking pan; set aside to cool. Poke holes over the top of the cake with a fork or skewer; set aside. Dissolve gelatin mix in water; stir in orange juice. Pour over the cake; cover and refrigerate overnight. Frost with whipped topping before serving. Makes 12 to 15 servings.
