Mom’s Applesauce Muffins
From Emily Johnson of Pocatello, Idaho, this recipe fills your kitchen with the delectable aroma of apples and cinnamon. Delicious with sweetened, dried cranberries in place of the raisins too!
1/2 c. butter, softened
1 c. sugar
1 egg, beaten
1 c. applesauce
1 t. cinnamon
1/2 t. ground cloves
1 t. baking soda
1/4 t. salt
2 c. all-purpose flour
1 c. raisins
Combine all ingredients; stir until moistened. Fill lightly greased muffin cups 3/4 full; sprinkle with Crumb Topping. Bake at 350 degrees for 25 to 30 minutes. Makes 12 to 16 muffins.
Crumb Topping:
1/2 c. butter
3/4 c. all-purpose flour
3/4 c. quick-cooking oats, uncooked
1/2 c. brown sugar, packed
2 t. cinnamon
Blend all ingredients until crumbly.
