Berry-Lemon Trifle
Soft angel food cake, tons of berries and fruit plus a healthy dollop of whipped topping, this trifle from Best-Loved Baking Recipes is a warm-weather sensation. Served in a big trifle bowl, it's just as delightful to look at as it is to eat.
14-oz. can sweetened condensed milk
8-oz. container lemon yogurt
2 t. lemon zest
1/3 c. lemon juice
8-oz. container frozen whipped topping, thawed
10" angel food cake, sliced into 1-inch cubes
1 c. strawberries, hulled and sliced
1 c. blueberries
1 c. peaches, peeled, pitted and sliced
Garnish: additional frozen whipped topping, thawed, and 1 c. raspberries
Combine condensed milk, yogurt, lemon zest and juice in a large bowl; fold in whipped topping. In a 3-quart clear glass trifle dish, layer one-third of cake cubes, one-third of lemon mixture and strawberries. Repeat with one-third of cake cubes, one-third of lemon mixture and blueberries. Layer remaining cake, lemon mixture and peaches. Top with additional whipped topping and sprinkle with raspberries. Cover and refrigerate at least 4 hours. Serves 16.
