Oven Chicken Cordon Bleu
Pecans lend a crunchy touch to this favorite, shared with us by Heather Webb of Richmond, Virginia...thanks, Heather!
4 boneless, skinless chicken breasts
4 t. Dijon mustard, divided
1 t. garlic, minced and divided
4 slices deli ham
4 slices Swiss cheese
olive oil
1 c. chopped pecans
Pound chicken breasts flat; top each with one teaspoon mustard and 1/4 teaspoon garlic. Place one slice ham and one slice cheese on each breast; roll up each breast and secure with toothpicks. Brush each roll with oil; roll in pecans. Place in a 13"x9" baking pan; bake at 350 degrees for 35 to 40 minutes. Serves 4.
