From break-of-day breakfast to a Picture-Perfect Paella (below), we've got all sorts of ways for you to get creative with your cast iron. So put away the baking pans and never mind the non-stick skillet...one cast iron pan is all you'll need!

Picture-Perfect Paella
This classic Spanish dish from 101 Stovetop Suppers is not only beautiful, it's packed with flavor and impressive enough for company. It takes a little time to prepare, but it's totally worth it!
3 lbs. chicken
2 onions, quartered
1 stalk celery, sliced
2 carrots, peeled and sliced
salt and pepper to taste
6 c. water
2 c. long-cooking rice, uncooked
2 cloves garlic, crushed
1/4 c. oil
1 c. peas
1/4 c. diced pimentos, drained
1/2 t. dried oregano
1/8 t. saffron or turmeric
1 lb. uncooked large shrimp, peeled and cleaned
12 uncooked clams in shells
In a large skillet over medium heat, combine chicken pieces, onions, celery, carrots, salt, pepper and water. Bring to a boil; reduce heat, cover and simmer for one hour. Remove vegetables and chicken, reserving 6 cups broth. Dice chicken and set meat aside, discarding bones. In same skillet over medium heat, cook and stir rice and garlic in oil until golden. Add reserved chicken, reserved broth, peas, pimentos, oregano and saffron or turmeric. Cover and cook over low heat for 15 minutes. Add shrimp and clams; cover and cook for another 10 minutes, or until shrimp are pink and clams have opened. Serves 8.
