Fresh from the vine and bursting with flavor, there's nothing like a summertime tomato at the peak of freshness. Of the bushels we gather from our garden, many of them are eaten simply sliced with salt and pepper. But what to do with the rest? That's where this week's collection comes in!

Fresh Tomato & Basil Linguine
We can't have a tomato slideshow without a good pasta recipe, and this one from Everyday Simple Suppers is one of the best we've had. Fresh tomatoes, basil, olive oil...so simple but so good!
1-1/2 lbs. tomatoes, finely chopped
3 cloves garlic, minced
1 red pepper, chopped
1 bunch fresh basil, torn
1/2 c. olive oil
1 t. salt
1/4 t. pepper
16-oz. pkg. linguine, cooked
Garnish: shredded Parmesan cheese
Stir together tomatoes, garlic, red pepper and basil in a large bowl; drizzle with oil. Sprinkle with salt and pepper; mix well and toss with hot cooked linguine. Sprinkle with Parmesan cheese, if desired. Serves 6 to 8.
